If you regularly order a wine because you feel safe knowing you don’t dislike it, wine pop-up Sub Rosato wants to broaden your horizons.
The brainchild of Virginia Samsel and Chloe Rhote, Sub Rosato has been popping up at Sub Rosa Bakery every other weekend from 5 to 11 p.m. since May.
A curated list of eight wines by the glass, generally two sparkling, two whites, two reds and two Roses is accompanied by light bites, such as meat and cheese plates, pizzas and snack type offerings like buttery goat cheese tarts. At the next one, food will be available from upcoming Church Hill spot Soul ‘n Vinegar.
And unlike many pop-ups, the duo’s long-term goal is not a brick and mortar location. “We want people to know that there are more wine choices out there,” Samsel says of their decision to feature specific producers, regions and grape varietals. They also hope to create a sense of community around wine, as well as focus on the natural and bio-dynamic wines that Sub Rosa owner Evrim Dogu favors. Should you discover a new favorite, the proprietors can special order wines or steer guests to markets that carry them.
Events are regularly posted on their Instagram – “We like it for its immediacy and approachability,” Samsel says — and on Sub Rosato’s Facebook page.
Approachability is the name of the game as they strive for a more casual, glass-driven approach in a convivial atmosphere, but it’s also designed as a reminder that wine is part of what Sub Rosa Bakery now offers. Music, too, is sometimes part of the equation, as when the band Miramar played several weekends this summer.
Samsel says there’s a relaxed community feel to the pop-ups, a kind of European vibe with people who bring their children arriving early and others lingering late into the evening making new acquaintances. “I’ve always said that wine is the easiest way to make friends.”
