For $11, you get a quick consultation, after which a bartender’s mind and hands will begin to fly and a one-of-a-kind concoction will be set before you. It’s called the dealer’s choice. The pitch: “Tell us, in a couple words, what you like and don’t like and we’ll create a custom cocktail.” Add $4 and you get an upgrade to the gentlemen’s choice, the same idea but with “the very best spirits available.”
