Much to the end of the other comments in this thread, I have to defend my "child". As the new chef for Grandstaff, I am walking into many challenges here, but am embracing them with loving arms rather than look the gift horse in the mouth.

This is the menu I walked into. I understand it has no theme, no flow, and no sense of purpose, but I would like to enthusiastically invite Mr. Freeman back to our restaurant when we release our new menu. We are switching to a seasonal menu and we will be locally sourcing as much as possible, and working within the limits our our equipment and space rather than writing a menu that simply looks good on paper.

To you Mr. Freeman, I say good luck.
