I was a fan of Chef Ryan Baldwin when he was in the kitchen at Tastebuds American Bistro. He was nominated for an Elby there. Perhaps, though, in hindsight, the owner's influence over the menu there had much to do with his success. Next I heard, Chef Baldwin was master of the menu at The Viceroy. Anxious to see what he could do with more control, we visited the restaurant. My meal was heavy, bad, and overpriced. Nothing on the menu really appealed. Though the menu was touted as locally-sourced, neither the menu nor the wait staff could tell me where my food came from. It was no surprise, then, when I heard the restaurant was closing and revamping the menu sans Baldwin. Recently, he has been "guest chef" back at Tastebuds. During a recent wine dinner there, in collaboration with their resident chef, Baldwin's credited menu items - while imaginative - missed the mark for taste and appeal. I consider myself an adventurous diner and have enjoyed Richmond's " culinary coming of age." Chefs and restaurant owners, however, need to fill seats and sell meals and when that doesn't happen, change is necessary. Whatever their reasons, the owners at The Viceroy made their business decison to close. My experience suggests that Chef Baldwin was a big part of that.
