Boka Tako Truck was the first food truck in town that took its lead from the gourmet truck trend burgeoning throughout the country. Richmonders tasted both Asian tacos for the first time and corn tortillas wrapped around shrimp and grits and decided that they liked them — a lot. At Goatocado, owner Ian Newell is proud of how the place stuck to its guns to provide fresh, fast food that uses compostable materials. It also provided a completely vegetarian food truck. Richmonders now think more consciously about their food than when Newell started. And Goatocado recently began offering organic chicken as an add-on option to breads, bowls and broths. “Our goal isn’t to turn people vegetarian,” Newell says. “We just want them to think about what they’re eating. Maybe it’s their third or fourth visit before they try a vegetarian dish. That’s a win.”
