Riesling — For me the Washington State ones are the best here. They have a fruitiness that is sublime.

Pinot Noir — California or France. This is fabulous with the tuna.

White Burgundy — (St.Veran or a good Macon.) They are 100 percent chardonnay without the oak.

A good bubbly — A California or Spanish cava work well.
