The Heart Ball at the Science Museum of Virginia, which raised more than half a million dollars for the American Heart Association. Mosaic catered the twinkling, cirque-themed fantasy of acrobats, stilt walkers and desserts that arrived on wooden trains. As for the menu, it followed the theme, including Cracker Jack chicken skewers, caramel candy apple salad, popcorn tossed with olive oil and sea salt, herb-crusted roasted beef tenderloin medallions with a bourbon-root beer demiglace, cauliflower-dutchess potatoes with edible bell pepper confetti, and ice cream with such toppings as funnel-cake crackling, chocolate pretzels and multicolored cherries.
