When summer stifles, the surest remedy is a water-beaded glass, sipped with friends on a shaded screen porch. To zip up your home entertaining, try a few new recipes from Jannequin Bennett, executive chef and general manager of TJ's at the Jefferson Hotel.

Cloud 9
2 oz. pineapple
3/4 oz. Chambord
2 oz. Cirrus (a Richmond- made vodka)
Shake and serve straight up.

Sunset Sparkler
1 3/4 oz. Pama pomegranate liqueur
2 oz. champagne (TJ's uses Gruet Blanc de Blancs)
2 oz. orange juice
Serve on the rocks or straight up, with
a splash of triple sec.

Cosmo-not (nonalcoholic)
4 oz. cranberry juice
2 oz. orange juice
1 oz. lime juice (about half a lime)
3/4 oz. sugar-free vanilla syrup
Shake and serve in a martini glass.
