I think that's a more apt analogy than either previous one, given the level of regard for service I've seen displayed by some people in these comments. I get it... food is an art of sorts and you want to do it the way you want to do it. And hey, I'm not the kind of guy who goes to Magpie or the Roosevelt or whatever place Andy Howell is running and starts making suggestions to the chef. When I know a chef is good, I don't have a problem letting them pick out my whole meal. I don't split plates, tip under 20%, use electronic devices when eating or coupons, either.
I'm just saying, as a businessman, that attitude doesn't seem like one that lends itself to success.
I wonder how well my business would flourish if people hired me to build them houses and I insisted on building the house that I want to live in and told them "fuck you, there are lots of people who need houses" when they request otherwise.
I mean, I enjoy carpentry, but I'm not under the illusion that I'm in business to do anything other than to give people what they want within reasonable limits. It's called "the service industry" for a reason. An owner, chef, waiter, bartender, etc... can act like they're not in the restaurant biz to serve others, but that's an attitude doomed to fail in a market with such tight competition.
Of course, everybody's John Wayne on the internet. I imagine most of these folks talking shit have sense enough to be less cavalier when actually in front of their customers with their business's reputation on the line.
